Labor Day weekend is approaching, signaling the kick-off of college football season and the unofficial end of summer. Tailgates and cook-outs are calling. The recipe below saved me from a near July 4th Fail.
For Fourth of July our neighbor does fireworks. He does big fireworks. We asked what we could do to help. The only directions were to bring a dessert for the kids’ table of goodies. My mom (aka Coco to my kids), trying to respect my reduced sugar approach, had recently found a Chickpea (yes, chickpea – like the backbone of hummus) Peanut Butter Chocolate Chip Cookie recipe. The day before the fireworks, she arrived at our door with cans of chickpeas, a jar of peanut butter and chocolate chips. The boys were so excited for their favorite Coco activity: making cookies! My mom and I had some apprehension about how this recipe would turn out. If edible, they were to be our contribution to the party. Once the “cookies” came out of the oven, we learned that our concerns were well-founded. The only thing in common between the Chickpea Peanut Butter Chocolate Chip cookies and real Peanut Butter Chocolate Chip cookies was their shape. The “cookies” made their way to the trash and I was back to square one on what to bring to the fireworks.
Determined to find something festive, I went to the drawing board, googling: 4th of July treats. There were so many cute ideas, but I was in a time crunch. The party was in just a few hours and my window to cook and prep food is small. I came across a recipe that is essentially the goodness of S’mores minus the requisite fire. With S’mores, the combination of graham crackers, chocolate and marshmallows is hard to beat. Plus the memories they invoke of summer, bonfires and lightning bugs.
But a blazing bonfire (or fire pit) is not always an option. And lightning bugs are only out for a few summer months before they burrow underground to hibernate for the winter. (Did you know lightning bugs are really a type of beetle?! What did I do before Google and wikipedia?)
The recipe not only sounded delicious, but it looked easy – I bought in. Fair warning: there is nothing nutritionally redeeming here and way too much sugar. But sometimes life needs to be more fun than Chickpea Peanut Butter Chocolate Chip cookies.
Five minutes after putting the platter full of my modified S’mores on the treat table, the only thing left was the platter. Bonus: my husband overheard my 3 year old proudly telling the older kids going in for seconds: My mommy made those!
If in a bind and need a fail-proof, kid-friendly, crowd-pleaser: try these. With summer winding down, this is the perfect recipe to lament the end of long nights, bike rides in the street and crickets chirping as the sunsets.
- 1/4 cup butter
- 1 10 ounce package of marshmallows
- 1 12 ounce package of Golden Grahams (or generic version)
- Mom’s Best Cereals makes a great version, which is about as close as I could get to anything remotely “healthy”
- 2/3 cup chocolate chips, melted
- Grease 13×9 pan
- Melt butter in sauce pan over low heat
- Add marshmallows, reserve a handful for toppings
- Cook, while stirring, until smooth
- Remove from heat
- Add cereal and mix well
- This is the hardest part, but still pretty easy!
- Transfer to the greased pan
- Using a greased spatula, spread evenly in the pan
- I sprayed cooking spray on the spatula
- Place (or sprinkle) reserved marshmallows on top
- Melt chocolate in microwave, in 20-30 second intervals, stirring in between intervals
- Drizzle chocolate on top, using a spoon or fork
- I had more luck with a spoon
- Cool, then cut and transfer to serving dish
